How about a segment on how to remove the Samsung "cruft" from a Samsung Galaxy Note / Tab / Phone?

I have a GN2 10.2 and a GS4. I'd like to keep the stylus support on the GN2 but otherwise get closer to basic Android; without rooting completely rebuilding the system.

The first step for that will be rooting. Iyaz has made an episode on rooting Android. Now what to remove and alter after that, yes, we could use that. With root power comes power to munch your device into a brick.

I'd prefer a solution that does not require rooting. I have a couple of devices that access a corporate network & our IM security guys get rather twitchy about rooted devices...

Put it this way: I've never heard of ways to do it WITHOUT rooting. I would guess this is because most if not all the cruft is in /system (mostly /system/app)
