I customized a N7 install in a Suburban and  used a DVD head unit for my volume. That way we can use the DVD's we already have for the back seats.

The headphone out of any tablet is is a pre amplified output, so you can stick it in any small amp with a volume control.

You can use something as simple as this

http://www.amazon.com/gp/product/B003FPD3IS/ref=pd_lpo_sbs_dp_ss_1?pf_rd_p=1944687742&pf_rd_s=lpo-top-stripe-1&pf_rd_t=201&pf_rd_i=B0002J226O&pf_rd_m=ATVPDKIKX0DER&pf_rd_r=1J6AQJ9NEWQH8083JTAC

or get a amp with its own controllable output volume.

The amp connects to both if you have a stereo (AKA a head unit) in your car. Are you going to keep the head unit or put the tablet in it's place?

You need a amp in your car to power the speakers. Some head units have them built in with speaker connections on the head unit itself or if you dont have a location for an extra head unit, you will have to get an amp and hide it somewhere in the car.

I hope that makes sense.

I was gonna keep the head unit only to get the sound to the speakers but if it's possible, I would much rather not keep it so that I have more room to customize the tablet into the dash. I ordered the amp you suggested, I'm getting it tomorrow ! Thanks for the suggestion and I'll play with it to see if I can figure out how to get the sound without the head unit.

The part I suggested was not an amp. You still need an amp somewhere.

I suggest losing the current head unit and getting a small amp to power the speakers. Then put the volume control I suggested in between the amp and the tablet headphone out. Then hide the amp in the dash somewhere and custom mount the volume control somewhere on the dash.
