Until they possibly add back that feature into Assistant you can use this to share your screenshot (either by the normal Power + Vol Down or long pressing home for Assistant and swiping up to click the take screenshot button) with this app and have it perform an OCR scan of your image to extract the text. I've verified that any text (minus some hand written text) from any image will work in this app. It's not as nice as the built in feature from Now on Tap but if you don't want to have to revert back to Now on Tap by changing your system language (which I totally get since many other features of Assistant are nice) this is a good app to have in the mean time. Oh and yes, I am aware of the app named "Universal Copy" that I think most people use but it doesn't play well with text from images. I also know of Microsoft's "Clip Layer" but that app takes over the long press on home which defeats the purpose of using an app to bring back the text selection without removing Google Assistant https://goo.gl/k49sz0
