I've seen similar videos of quads doing this, and I'm trying to wrap my brain around it. How is it hovering upside down? I heard him say the motors reverse, but how? What kind of FC and motor setup does this?

Has to switch rotation of the props when it flips, looks cool tho

Yeah, he's reversing the direction of rotation of the props - which is probably why they're bolted on at two points instead of just using a single bolt.
