My theory as to what tipped apple to add it is because nfc payment is very popular in Asia. Take Japan for example where iPhone is over 50% of the smartphone market and nfc (felica) is used practically everywhere. You can almost pay for anything with an nfc card from train fare, boarding domestic flights, taxis, vending machines, restaurants, etc.. My point is iPhone is popular in japan but it is a pain for most iPhone users as they have to carry multiple nfc cards. If the next iPhone supports nfc (felica for japan) it might sway more users to iPhone and not give them a reason to switch to Android which already supports nfc. What do you think?
