Well you never learn anything if you don't try :D

But I was thinking of putting in Ethernet jacks in two rooms. So I want to have some form of patch panel in one room with a outgoing Ethernet cable that continues to the next room.

I was wondering what kind of patch panel I would need and how do I connect the two RJ45 jacks (I want to jacks in each room) in the panel as I at the same time connect a outgoing cable to the next room?

Erik Ellsinger you'll need a separate cable for each room/device that you want concurrently connected. An AP in each room would require a cable from the switch/router to that room.

For patch panels, I've always loved Monoprice. Shipping is slower than Amazon, but you can order everything you need and get it cheaper. Instead of crimping RJ45 ends in each room, it's better to use keystone jacks.

So, to hard wire 2 rooms with Cat-6 Ethernet...

2x (or 4 if you want to double up) Cat-6 keystone jacks: https://www.monoprice.com/Product?p_id=5379

2x plates (single or double hole):

1-gang low-voltage mounting brackets:

Some cable - plenum-rated is recommended, but you may not need 1000 ft:

For home, you could probably get by with riser-rated cable. Still not recommended, but if you don't plan on burning it you should be fine. Plus its available in 500 ft lengths:

Patch panel - I like these 12-port mini patch panels for small jobs:

Hope that helps!
