I came close to buying an Immersion circulater. Its a big spend for occasional use though. Probably the only negative is you still have to sear the meats afterwards to get the carmelization flavor going.

Haven't had much time to actually read it. The section on knives looks interesting, really want to read Adam savages interview, and I love the organization.
