If you pull up your phone and go into the call settings > phone account settings > internet calling (SIP) accounts, you can enter your server address username and password, no app needed. I hadn't looked recently, so glad to see that it's still an option! I really don't see any reason the data-only plan wouldn't work still. It sounds like T-Mobile's $30/mo plan would probably be just as good if it comes out to the same price (and you have good T-Mobile coverage). I've been on Sprint for the last 12ish years so we just recently (4 years ago?) got SIM cards. Only once or twice have I even removed mine.
