Ah, I can't really speak to issues with the OS. I wouldn't expect it to cause any issues too seriously. And I don't know how difficult those would be to remove without causing damage.

You could use a Pi 2 instead. Still really good performance and the factory will forget to install bluetooth and wifi chipsets for no additional charge :)

I haven't looked at what they actually are, but it should be super easy to remove the kernel drives once you know what the driver is. Probably somewhere in /sys or a modprobe command.

I returned my first Pi 3 because the wifi and bluetooth were DOA out of the box.
