I 'm thinking of building an onion Pi

I'm thinking of building an onion Pi. The problem is that I mine crypto currency from the Pi. I don't want to route my mining pools through the proxy. From what I've read online, when you install onion Pi it turns the Pi into a anonymous proxy server.

 

Can I build the onion Pi using two wifi dongles and route the mining pool data through Ethernet? I've got a Pi b+ and I can't seem to find an answer searching Google.
