Hey BM, here is a video from Flitetest I am thinking will work for me.

My question is going from the 8awg wire coming off the lipo to a wire gauge that is more suitable for XT60. So I agree, cut the connector on the lipo, but can I solder the larger gauge to smaller gauge (more suitable for XT60) then into the XT60 without any issues?

the Gauge of the wire... is matched to the MAX Current the connector can carry.  So,  here is what you can try... get the connector you want to use,  then Cut and strip the wire.... Insert the wire into the downsized Connector... if it Fits.. you are O.K.... if it does not fit, it means you will surpass the current Rating of the connector... NOW... for some bad advice,  carefully trim away a few strands of wire to get the connector to Except the wire.  monitor the connector for signs of Melting or excessive Heat. Usually the insulation around the connector will tell you if the current going through the connector is excessive.
