G+_Joseph Cappellino
If you have root, you can go in and delete/rename the Talk app from /system/app. If not, you can try to disable it from System Settings --> Apps, then update from Google Play. The former definitely works, as I did it on my Nexus 7 running CyanogenMod 10.1. Good luck.
G+_Kevin Spitzer (JaguarXT
Go to Hangouts (Talk) page on Play Store site within your browser and choose to install. It might tell you that it is already installed. But do the installation anyway. If you still have Talk then your device/s should be allowed to install Hangouts despite that tells you that Hangouts is installed. I suspect that this is due to different numbered versions. https://play.google.com/store/apps/details?id=com.google.android.talk ?
G+_Wing
Push the install from the play store website. Basically what Kevin Spitzer wrote.
