Is there an easy way for to use a magnet? The Nexus 7 has a magnet to wake/sleep the screen, I believe, like an iPad. Failing that, if you have power to the Nexus 7, use Car Home Ultra for a car mode and tell it to keep the display on.

 

Double tap to wake is one of my favourite features on my HTC One M8...

I tried the magnet solution with my nexus 7 about a year ago. There are quite a few apps that claim to work, but in the real world results were spotty. Anything that monitors a sensor while the screen is off will only work some of the time, android doesnt seem to poll the sensors often (even when configured to do so). You could try rigging something up with pressy (http://get.pressybutton.com/). If you had a proximity sensor, that would be an option, but unfortunately you dont. There are other solutions that wake the device when you double tap the screen (these are the best IMO), but you'll need to flash a kernel. I'm blanking on the names of the apps, hopefully someone can help with that. One app was on an episode of all about android.

One app that may work is Automateit. You can set a trigger for the screen to turn on when you turn on the car. Assuming that you have it plugged in at all times to the DC adapter. For example, it mine to enable screen lock and turn off the screen when I plug it in.
