You can't go wrong with either CyanogenMod or Android Open Kang Project I think, but not sure, that AOKP is based off of CM (hence "kang"). I've heard good things about both, but been running CM 10.1 nightlies on my GS3. Flashed an AOKP ICS build for a friend's old Samsung Captivate, and he seemed to like it.
