I have a Nexus 7 2012 with 3G. It began slowing down before the 5.0 update but when I made the switch it made the thing all but unusable. It does work, but all I use it for now is watching my video podcasts and it stalls out, stutters, and reboots constantly. Also the battery life is now less than 24 hours when it is doing nothing. All that is to say that I am looking at how to repurpose it. I was thinking about using the screen for a Raspberry Pi build but I might be out of my league on that project. Anyone have any ideas?

I had a Nexus 7 in the same condition and I was ready to toss it in the trash after the Lollipop update.  But then, I decided to restore it back to factory.  I don't remember, exactly the steps that I used but after restoring it, it was like having a brand new tablet.  It even restored 90% of my apps and settings.  I suggest you give it a shot before you make a harsh decision.

Yeah - each time you upgrade to another version there's always a bunch of cruft that sticks around and slows things down even if you clear the cache. A fresh factory install (after backing up your data) will do wonders sometimes. And if Lollipop is still to slow, there's always the factory images of KitKat still available.
